How to make fresh Vermicelli Noodles with the Phillips Pasta Maker Machine
Fresh Vermicelli Noodles from Scratch
250g Rice Flour
150g Tapioca Starch or Wheat Starch
10g Xanthan Gum
1 1/2 tsp Salt
2 tbsp Cooking Oil (use the oil that is pure)
1 1/4 cup hot water or 1 cup boiling water and 1/4 cup cold water
Distilled White Vinegar
In a separate bowl, combine all flours, salt, and mix well for one minute. (Kitchen aid mixer recommended)
Add cooking oil and mix for 2 minutes.
Slowly add 1 1/4 cup hot water while mixing and let it mix for 3 to 5 min.
Let the mixture rest for at least 3 minutes.
Put mixture in the pasta machine and let it mix for 3 minutes. (Mixture should look chunky like cottage cheese)
Stop pasta machine and let it rest for 3 minutes. Repeat this step again. (this method helps the noodles to be more chewy and allows the flour to absorb more water)
Place a pot of hot water (med high heat) next to the machine (so the noodles will go directly into the pot of hot water)
Add 1 tsp salt, 1 tsp vinegar, 4 tbsp cooking oil to the pot of water.
Start pasta machine again and let it run.
Continously stir the noodles in the pot gently.
Once all the noodles are out of the machine, cook for about 3-5 minutes, turn off the burner and gently stir for 1 minute.
Drain and rinse noodles with cold water.
Soak noodles with cold water and 1 tsp of salt for 1 minute then drain.
Soak noodles with cold water and 2 tsp vinegar then drain and rinse well.
Roll noodles into bundles and enjoy!
*Note: If you prefer to have your noodles chewier, use 200g Rice Flour and 200g Tapioca Flour and reduce 1 to 2 tbsp water.
