Super Crispy and Tasty Fortune Cookies

For Lunar New Year this year, Chef Sam made fortune cookies to gift her Grandparents, Aunt and Uncles. It's tradition to visit your elders on or a few days before new year and wishing them a prosperous New Year. While there are so many sweet ways to bring them gifts, this one is by far my favorite and most meaningful.

Inside each cookie will include her personalized New Year wish for them. Is that cute or what?!

Best of all, you can make these yummy cookies for any occasions and personalize them however you wish!

Proposal or love notes

If you plan on having a Gender Reveal party, you can give each guest a fortune cookie. The one with the announcement cookie of "it's a girl" or "its a boy" will win a prize. Everyone else's cookies will say "boy or girl" "he or she" or "prince or princess" "you didn't win" "not it"

Make fortune cookies for "just because" and put a smile on someone's face.

We spent several days testing out different recipes to get the tastiest and crispiest cookies just for you! Our favorite is from Pop Sugar and we modified it to our liking.

Fortune Cookie Recipe

  • 1 cup All Purpose Flour

  • 1/4 cup Rice Flour

  • 3/4 cup Granulated Sugar

  • 2 tsp Cornstarch

  • 1/2 tsp Salt

  • 4 Egg Whites

  • 1/4 cup plus 2 tbsp Canola Oil

  • 1/2 tsp Vanilla Extract

  • 1/2 tsp Almond Extract (if you don't have Almond Extract, then just double on the Vanilla Extract)

  • 3 tbsp Water

  1. Preheat oven to 350 degrees

  2. Start by mixing the dry ingredients first. In a large mixing bowl, shift the AP Flour, Rice Flour, Sugar, Cornstarch, and Salt. (How much sugar is on personal preference.)

  3. In a separate bowl, whisk your egg whites until frothy.

  4. Make a well or a space in the middle of the dry mixture and add the Oil, Extract, and Water.

  5. Mix well and slowly add in your frothy egg whites.

  6. Line cookie sheet with parchment papers or silicone baking mats.

  7. Place a teaspoon to one tablespoon full of the batter onto the cookie sheet and with a spoon, thin out the batter into round shapes about 3 inches in diameter. For better result, try to make it thin and as round as possible.

  8. Start with only 2 or 3 cookies for each baking sheet because these cookies have to be really hot to form the shape. I used 4 different baking sheets and alternate back and forth to save time.

  9. Bake for 8 to 10 minutes or until the edge of the cookies turn a light golden color. The center will be a lighter color.

  10. Remove from oven, flip the cookies over and place a fortune slip at the center of the cookie. This part is for adults only. I wouldn't recommend having the kids help you at this point.

  11. Quickly fold the edge over in half then lightly place the folded half over the rim of a glass and pull the pointed edges down.

  12. Place them in a muffin tin (cup cake pan) to help hold the shape while you work on the next cookie. I used my Banh Khot pan because its smaller and gives the cookies a nicer shape when the edge are closer. You have to form the cookies while its hot so you have to work fast. As soon as you take them out of the oven, you literally have about 15 to 20 seconds to form these cookies before they harden and you can't bend them anymore. So be careful.

  13. That's it.. enjoy!

*Notes and tips*

Make your fortune slips ahead of time. I made a list of my fortunes then print and cut them into 2 1/2 inches by 1/2 inch slips. Using Myriad Pro font size 12 pt.

To keep the cookies fresh longer, keep them in a covered container, tin or sealed bag. Your cookies can stay at room temp for several weeks and remain crispy if stored properly.

This recipe yields approximately 40 cookies but this number will change according to how big or thick your cookie is. Try to keep within 3 inches in diameter and use approximately one teaspoon to one tablespoon full for each cookie.

For best results, wait until the cookie sheet cools off before placing your batter. With that said, your first batch should be consistent and the prettiest. I was alternating between 4 cookie sheets, and didn't wait for it to cool off so my cookies are a bit uneven.
