Fresh Pho Noodles

How to make fresh Pho Noodles with the Phillips Pasta Maker Machine

Pho and Mi Quang Noodles

200g Rice Starch

200g Tapioca Starch

100g Potato Starch

10g Xanthan Gum

1 tsp salt

3 tbsp cooking oil

290ml to 320ml hot water

  1. In a separate bowl, combine Rice Starch, Tapioca Starch, Potato Starch, Xanthan Gum, and Salt (add 1/4 tsp of tumeric powder to make Mi Quang Noodles)

  2. Put mixture in the pasta machine and let it mix for 3 minutes.

  3. Stop pasta machine and let it rest for 3 minutes

  4. Start pasta machine again and add cooking oil

  5. Slowly add hot water

  6. As soon as the pasta machine is about to come out, turn it off.

  7. Let the mixture rest for 10 minutes

  8. Turn it back on to mix and let it rest for another 10 minutes (this step prevents the noodles from breaking)

  9. After the second 10 min. of rest, turn machine on and let it run.

  10. Sprinkle tapioca starch to prevent noodles from sticking to each other.

  11. Boil a pot of hot water

  12. Rinse in cold water
